The Castelnoha Cellars are in the territory of the medieval village of Ficulle, not far from Orvieto. The monumental building integrates perfectly with the landscape, between the vineyards and the olive groves, along the characteristic hills of Umbria.
Perfect synthesis of history, tradition and high technology. With its Franciscan-inspired cloister, which is located at the center of the structure, time seems to stop and follow the preservation and maturation of the wine. A place designed with full respect for nature and terroir that surround it. Studied in every detail to guarantee the excellence and the quality of the product in every phase of processing, up to the refinement of each bottle.
The tradition of this historic company is accompanied by the research and the high technological value of the wine and its processing method, strongly desired by Valentino Cirulli. An innovative oenology, able to use the most advanced winemaking technologies: starting from the pressing in the absence of oxygen, controlled temperatures in all production phases, up to the refinement process in steel or barriques in underground environments able to guarantee the ideal conservation.

RESEARCH, MODERNITY AND SUSTAINABILITY FOR EXCELLENT WINES
The harvest is carried out separately for each type of blend; once harvested, the selected grapes are transported to the winery for crushing and then start the vinification process in steel vats, all at controlled temperature.
This choice, due to a deep knowledge of the territory and the organoleptic characteristics of the grapes, allows a careful control of the fermentation process, keeping separate the natural specifications of each vineyard particle and developing the various aromas and flavors, thus obtaining the extraction of the noblest substances from the peels, both for white and red wines.
At the end of the fermentation process, wines are transferred to oak barrels and barriques located in the underground part of the winery. All Cirulli wines are subject to frequent laboratory checks throughout their evolution until refining in bottles, which takes place in special thermo-conditioned rooms.

THE LAZIO PROJECT
In the next years, the Cirulli family will be creating new long-term projects. A new winery opening in Lazio is expected by 2021, taking place near Rome, precisely in the Appia Antica park.
A territory historically and archeologically relevant; just here stood, infact, Tellene (year 118), a small city in Lazio, that belonged to the famous Latin League. Dionigi and Pliny prove its existence in their writings and describe it as a walled city, when conquered by Anco Marcio together with Politorio and Ficana, its inhabitants were then moved to Rome. The last memory of Tellene is from Pliny (Hist. Nat. book III. c. V. §. 9) that places it in the Lazio “clara oppida” (Lazio famous cities), that perished without vestige (interiere sine vestigiis).
Nowadays the ancient caves are being restorated, an architectural treasure that takes place in the natural and archeological context, without spoiling it but rather enhancing the ancient artefact.
